Indian Masala-Spiced Chickpea & Chicken Bowl
Ingredients:
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece fresh ginger, minced
- 2 tbsp Jersey Girl Indian Masala hot sauce (or to taste)
- 1 can (14 oz) diced tomatoe
- 1/2 cup coconut milk
- 2 tbsp vegetable oil or ghee
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Fresh cilantro for garnish
- Cooked basmati rice or naan to serve
Instructions:
Prepare the Chicken:
Heat 1 tablespoon of oil or ghee in a large skillet over medium-high heat. Add the chicken pieces, season lightly with salt, and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the pan and set aside.
Sauté Aromatics:
In the same pan, add the remaining tablespoon of oil. Add chopped onion, and cook until softened and translucent, about 4 minutes. Stir in garlic and ginger; cook for another 1-2 minutes until fragrant.
Add Spices and Masala:
Add cumin, coriander, turmeric, and garam masala to the pan. Stir well, letting the spices toast lightly for about 30 seconds. Then add the Jersey Girl Indian Masala hot sauce and mix thoroughly.
Build the Sauce:
Pour in diced tomatoes with their juices and coconut milk. Stir to combine, then bring the mixture to a simmer. Let cook for 5-7 minutes, allowing the sauce to thicken slightly.
Add Chickpeas and Chicken:
Add the drained chickpeas and cooked chicken back into the pan. Stir to coat evenly with the sauce. Simmer together for another 5 minutes until heated through and flavors meld.
Season and Garnish:
Taste and adjust salt as needed. Remove from heat. Garnish with fresh cilantro.
Serve:
Spoon the chickpea and chicken masala over cooked basmati rice or warm naan. Enjoy your hearty and flavorful bowl!
